Our favorite vegetarian meal!

Breakfast Burritos is a popular breakfast around our house and we often make them meatless, though to be honest not always, and by we I mean Tony. 

Hashbrowns and Black Beans
It's a simple process really and can be doctored in a half a dozen ways.  Tony is frying the hashbrowns with some seasonings.  We like seasoning salt, pepper, paprika and the interesting one: curry.  It works!

Second to last we add eggs, after they have been scrambled.  Have you heard the news on eggs - the cholesterol in them isn't so bad!


Once you mix in the eggs, we add a can of rotel on top for some juicy flavor.  We also like to add diced pepper or diced tomatoes when we have them.  As you can tell we make more than enough for two portions, as it keeps in the fridge for a few days.  Tony loves the idea of cooking once and eating multlple times.

Serve on a tortilla shell with a little cheese melted on top. Yum.
